Det skal ikke tage farve, men m\u00e5 gerne sautere i 4-5 minutter. Kom k\u00f8det i gryden, og lad det brune. Tils\u00e6t tomatpur\u00e9 og hakkede tomater, og krydr med oregano, salt, peber og lidt sukker. Lad saucen simre under l\u00e5g og omr\u00f8ring i mindst 15 minutter. Kom lidt af k\u00f8dsaucen i et ovnfast fad. L\u00e6g et lag med squash, mere k\u00f8dsauce, et lag squash, mere k\u00f8dsauce, 1 mozzarella i skiver, squash og til sidst k\u00f8dsauce. Top med den sidste mozzarella i skiver.<\/p>\n<p>Bag lasagnen i en 200\u00b0 varm ovn i 35-40 minutter, eller til osten er gylden. Serv\u00e9r straks toppet med ruccola.<\/p>\n<p>TIP: Du kan ogs\u00e5 bruge squash i stedet for aubergine.
